We recently caught up with UHP students Courtney Ricci (BIS: Strategic Communication, Business Law, and Philosophy with a minor in Sport Management) and Rae Knopf (Entrepreneurial Management major, Product Design minor) to discuss their startup "Create Land of 10k Meals," which aims to "responsibly prepare, deliver, and donate 10,000 nourishing meals directly to Twin Cities community members affected by COVID-19 over the next 6 months, using local volunteers & underutilized kitchen equipment."
